How to Make Watermelon Rind Pickles
- After red meat of watermelon is eaten, cut rinds from the slices, leaving a little white on them. Cut into chunks. Add water and sugar to pot. Throw watermelon in making sure it is covered with water. Slow boil for about 4 hours. When tender and juice is thick, spoon into scalded jars. Pour juice in to fill. Seal tightly.
