This is good served with meats like braised ribs, lamb shanks... as a topping for meatloaf.

Ingredients

  • 1/4 teaspoon cumin
  • 1/4 teaspoon ground cinnamon
  • 1 pinch ground clove
  • 1/8 teaspoon cayenne pepper
  • 1/8 cup (1 oz) brown sugar
  • 1 ounce (fl oz) honey
  • 1 ounce (fl oz) cider vinegar
  • 1/4 ounce (fl oz) olive oil
  • 1 teaspoon ginger root, grated
  • 2 teaspoons garlic, minced
  • 1 pound tomato concasse, chopped
  • - as needed salt and pepper

How To Make tomato jam

  • Step 1
    In a saucepan, combine all ingredients, except the tomato concasse. Place the pan over medium heat and cook until the ingredients have reduced to a glaze.
  • Step 2
    Once reduced to a syrupy glaze, add the tomato concasse. Cook the tomatoes until broken down but still chunky. Season with salt and pepper.
