Makes 2 cups.
Ingredients
- 1/4 teaspoon cumin
- 1/4 teaspoon ground cinnamon
- 1 pinch ground clove
- 1/8 teaspoon cayenne pepper
- 1/8 cup (1 oz) brown sugar
- 1 ounce (fl oz) honey
- 1 ounce (fl oz) cider vinegar
- 1/4 ounce (fl oz) olive oil
- 1 teaspoon ginger root, grated
- 2 teaspoons garlic, minced
- 1 pound tomato concasse, chopped
- - as needed salt and pepper
How To Make tomato jam

Step 1In a saucepan, combine all ingredients, except the tomato concasse. Place the pan over medium heat and cook until the ingredients have reduced to a glaze.

Step 2Once reduced to a syrupy glaze, add the tomato concasse. Cook the tomatoes until broken down but still chunky. Season with salt and pepper.
