This is good served with meats like braised ribs, lamb shanks... as a topping for meatloaf.

serves Makes 2 cups.

Ingredients For tomato jam

  • 1/4 tsp
    cumin
  • 1/4 tsp
    ground cinnamon
  • 1 pinch
    ground clove
  • 1/8 tsp
    cayenne pepper
  • 1/8 c
    (1 oz) brown sugar
  • 1 oz
    (fl oz) honey
  • 1 oz
    (fl oz) cider vinegar
  • 1/4 oz
    (fl oz) olive oil
  • 1 tsp
    ginger root, grated
  • 2 tsp
    garlic, minced
  • 1 lb
    tomato concasse, chopped
  • as needed salt and pepper

How To Make tomato jam

  • 1
    In a saucepan, combine all ingredients, except the tomato concasse. Place the pan over medium heat and cook until the ingredients have reduced to a glaze.

    Once reduced to a syrupy glaze, add the tomato concasse. Cook the tomatoes until broken down but still chunky. Season with salt and pepper.
