Ingredients For tomato jam
(1 oz) brown sugar
(fl oz) honey
(fl oz) cider vinegar
(fl oz) olive oil
ginger root, grated
tomato concasse, chopped
as needed salt and pepper
How To Make tomato jam
In a saucepan, combine all ingredients, except the tomato concasse. Place the pan over medium heat and cook until the ingredients have reduced to a glaze.
Once reduced to a syrupy glaze, add the tomato concasse. Cook the tomatoes until broken down but still chunky. Season with salt and pepper.
