This is good served with meats like braised ribs, lamb shanks... as a topping for meatloaf.

Makes 2 cups.

1/4 tsp
1/4 tsp
ground cinnamon
1 pinch
ground clove
1/8 tsp
cayenne pepper
1/8 c
(1 oz) brown sugar
1 oz
(fl oz) honey
1 oz
(fl oz) cider vinegar
1/4 oz
(fl oz) olive oil
1 tsp
ginger root, grated
2 tsp
garlic, minced
1 lb
tomato concasse, chopped
as needed salt and pepper

How to Make Tomato Jam


  • 1In a saucepan, combine all ingredients, except the tomato concasse. Place the pan over medium heat and cook until the ingredients have reduced to a glaze.
  • 2Once reduced to a syrupy glaze, add the tomato concasse. Cook the tomatoes until broken down but still chunky. Season with salt and pepper.
