tomato - cognac jam
This is a unique way to use up all those tomatoes and it tastes GOOD TOO!!! It is also my entry into the ninja chefs challenge

Ingredients
- 5 pounds ripe tomatoes, finely chopped
- 3 3/4 cups sugar
- 8 tablespoons lime juice
- 2 teaspoons fresh ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1 tablespoon salt
- 1 tablespoon red pepper flakes
- 1/2 cup cognac
- 2-3 sprigs fresh mint (whole, to be removed before jarring)
How To Make tomato - cognac jam

Step 1combine all ingredients in a large non-reactive pot and bring to a boil, reduce heat and simmer stirring regularly and simmer until it reduces to a sticky jammy mess. This will take about 1 - 1 1/2 Hours.

Step 2Remove from heat and place in sterile jars leaving 1/4 inch headroom for expansion. Process in boiling water for 20 minutes.

Step 3You did not miss a step, DO NOT PEEL AND SEED tomatoes.
