Tomato - Cognac Jam

5 lbripe tomatoes, finely chopped
3 3/4 csugar
8 Tbsplime juice
2 tspfresh ground ginger
1/2 tspground cloves
1 Tbspred pepper flakes
2-3 sprig(s)fresh mint (whole, to be removed before jarring)
How to Make Tomato - Cognac Jam
- combine all ingredients in a large non-reactive pot and bring to a boil, reduce heat and simmer stirring regularly and simmer until it reduces to a sticky jammy mess. This will take about 1 - 1 1/2 Hours.
- Remove from heat and place in sterile jars leaving 1/4 inch headroom for expansion. Process in boiling water for 20 minutes.
- You did not miss a step, DO NOT PEEL AND SEED tomatoes.
