tomato - cognac jam

This is a unique way to use up all those tomatoes and it tastes GOOD TOO!!! It is also my entry into the ninja chefs challenge

Ingredients

  • 5 pounds ripe tomatoes, finely chopped
  • 3 3/4 cups sugar
  • 8 tablespoons lime juice
  • 2 teaspoons fresh ground ginger
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1 tablespoon salt
  • 1 tablespoon red pepper flakes
  • 1/2 cup cognac
  • 2-3 sprigs fresh mint (whole, to be removed before jarring)

How To Make tomato - cognac jam

  • Step 1
    combine all ingredients in a large non-reactive pot and bring to a boil, reduce heat and simmer stirring regularly and simmer until it reduces to a sticky jammy mess. This will take about 1 - 1 1/2 Hours.
  • Step 2
    Remove from heat and place in sterile jars leaving 1/4 inch headroom for expansion. Process in boiling water for 20 minutes.
  • Step 3
    You did not miss a step, DO NOT PEEL AND SEED tomatoes.
