This is a unique way to use up all those tomatoes and it tastes GOOD TOO!!! It is also my entry into the ninja chefs challenge

  • 5 lb
    ripe tomatoes, finely chopped
  • 3 3/4 c
  • 8 Tbsp
    lime juice
  • 2 tsp
    fresh ground ginger
  • 1 tsp
  • 1/2 tsp
    ground cloves
  • 1 Tbsp
  • 1 Tbsp
    red pepper flakes
  • 1/2 c
  • 2-3 sprig(s)
    fresh mint (whole, to be removed before jarring)

How to Make Tomato - Cognac Jam


  1. combine all ingredients in a large non-reactive pot and bring to a boil, reduce heat and simmer stirring regularly and simmer until it reduces to a sticky jammy mess. This will take about 1 - 1 1/2 Hours.
  2. Remove from heat and place in sterile jars leaving 1/4 inch headroom for expansion. Process in boiling water for 20 minutes.
  3. You did not miss a step, DO NOT PEEL AND SEED tomatoes.
