strawberry kiwi jam

I got this recipe out of a Ball Book for canning. It is my favorite and I look forward to it every year when I can. I hope you enjoy it!

Ingredients

  • 3 cups crushed strawberries
  • 3 - kiwi fruit peeled and diced fine
  • 1 tablespoon minced crystallized ginger
  • 1 package powdered pectin
  • 1 tablespoon lemon juice
  • 5 cups sugar

How To Make strawberry kiwi jam

  • Step 1
    Combine strawberries, kiwi, ginger powdered pectin and lemon juice in a large saucepot.
  • Step 2
    Bring to a boil, stirring frequently.
  • Step 3
    Add sugar, stirring until dissolved.
  • Step 4
    Return to a rolling boil. Boil HARD 1 minute, stirring constantly.
  • Step 5
    Remove from heat and skim foam if necessary.
  • Step 6
    Ladle hot jam into hot jars. Leaving 1/4 in of headspace.
  • Step 7
    Process 10 minutes in a boiling water canner.
