Spiced Rum and Maple Bacon Jam

Tammy Brownlow

I've tried lots of recipes for bacon jam - they are everywhere now. But I wanted one that had more of a kick to it. This is out of this world! I have an appetizer "Bacon Jam and Gorgonzola" that uses this jam. Give this a try. It is easy and doesn't last long. If you like sweet, spicy, and savory this could be the bacon jam for you!

How to Make Spiced Rum and Maple Bacon Jam

  1. On a baking sheet with raised edges. Place 4 strips of bacon. Place in oven then turn to 325 degrees. Place bacon in a cold oven actually prevents it from curling up. Bake until crisp about 20 minutes.
  2. After bacon is done. Measure 1 tablespoon of bacon grease and add to a medium saucepan. Add onions and cook until translucent on medium heat. Add garlic and serrano pepper and cook 2 minutes more.
  3. Add coffee mixed with creamer, vinegar, rum, maple syrup and cumin. Reduce heat to low and cook 20 minutes. Add 1 tablespoon cornstarch to 1/4 cup water and mix well. Add to simmering syrup until thickened like pudding.
  4. Allow this syrup to cool and add to a food processor. Break up bacon and add to food processor with syrup. Pulse until fine but still has texture.
  5. Spoon into a container and refrigerate.
