spiced rum and maple bacon jam
I've tried lots of recipes for bacon jam - they are everywhere now. But I wanted one that had more of a kick to it. This is out of this world! I have an appetizer "Bacon Jam and Gorgonzola" that uses this jam. Give this a try. It is easy and doesn't last long. If you like sweet, spicy, and savory this could be the bacon jam for you!

Ingredients
- 4 slices bacon, thick sliced hardwood smoked and sugar cured
- 1/2 small onion, chopped
- 2 cloves garlic, chopped
- 1 - serrano pepper, chopped - if you want it less spicy seed it first
- 1/2 cup hot coffee
- 2 teaspoons powdered carmel marrchiato creamer - i used nestle
- 2 tablespoons balsamic vinegar
- 2 tablespoons spiced rum - i used captain morgan's
- 2 tablespoons maple syrup - i used uncle lukes
- 1 teaspoon cumin powder
- 1 tablespoon cornstarch
- 1/4 cup water
How To Make spiced rum and maple bacon jam

Step 1On a baking sheet with raised edges. Place 4 strips of bacon. Place in oven then turn to 325 degrees. Place bacon in a cold oven actually prevents it from curling up. Bake until crisp about 20 minutes.

Step 2After bacon is done. Measure 1 tablespoon of bacon grease and add to a medium saucepan. Add onions and cook until translucent on medium heat. Add garlic and serrano pepper and cook 2 minutes more.

Step 3Add coffee mixed with creamer, vinegar, rum, maple syrup and cumin. Reduce heat to low and cook 20 minutes. Add 1 tablespoon cornstarch to 1/4 cup water and mix well. Add to simmering syrup until thickened like pudding.

Step 4Allow this syrup to cool and add to a food processor. Break up bacon and add to food processor with syrup. Pulse until fine but still has texture.

Step 5Spoon into a container and refrigerate.
