Ingredients
- 5 pounds diced rhubarb
- 5 pounds sugar
- 3 large pineapples
- 2 - lemons
- 2 cups chopped figs
- 4 cups water
How To Make pineapple rhubarb marmalade

Step 1Sprinkle sugar over rhubarb.

Step 2Pare and dice pineapple.

Step 3Combine pineapple parings and water.

Step 4Boil until liquid is reduced to 2 cups, then strain.

Step 5Add grated rind and juice of lemons, and pineapples.

Step 6Cook rhubarb and sugar until clear.

Step 7Combine the two mixtures, then add figs.

Step 8Simmer slowly, stirring constantly, until thick.
