Step 1Start with fresh peaches.

Step 2Rinse peaches thoroughly and cut away any bruises. Score the bottom of each peach and prepare a large bowl of ice water.

Step 3Place peaches in boiling water for approximately 40 seconds. If the peaches are not quite ripe, you will need to add an extra 15-20 seconds. Make sure peaches are completely covered.

Step 4Using a slotted spoon remove to the ice water.

Step 5Slip the skin off the peaches using your fingers, a soft fruit peeler or a paring knife.
