My wife is diabetic. My wife requested apple butter. Therefore... I looked at many, many recipes, but they all had so much sugar! My wife does not love artificial sweeteners. So I had to concoct my own. Sherry likes it with Gala apples. Use what you like best. This can be made in a slow cooker or on the stove top.

Ingredients For lower sugar apple butter

  • 5 lb
    apples
  • 1 c
    dark brown sugar
  • 2 Tbsp
    apple cider vinegar
  • 1 Tbsp
    cinnamon, ground
  • 1 Tbsp
    vanilla extract
  • 1 tsp
    ginger powder
  • 1/4 tsp
    salt

How To Make lower sugar apple butter

  • 1
Wash, peel, core, and chop the apples. Optional to peel them. Put them in a 5 qt Dutch oven or the crock of your slow cooker as you go.
  • 2
Add all the other ingredients and stir lightly.
  • 3
Set your Crock Pot on low heat or your stove on simmer/medium-low and cover. Stir every couple of hours. Cook until the apples turn to mush. At this point, I usually turn the heat off and finish the next morning.
  • 4
Transfer your mush to a 3 qt pot, lid somewhat askew, and simmer on the stove on low-ish heat. Stir every hour or so until the desired thickness is reached. Take it off the heat. I place a splatter screen on top instead of the pot lid while it cools so the steam evaporates.
  • 5
When cooled to room temp, puree it, put your apple butter in an airtight container, and refrigerate.
  • 6
Et voila! There's no high-fructose corn syrup in home made apple butter! And this has about 75% less sugar than most recipes.
