Makes 7 - 1/2 pints
Ingredients
- 2 cups lilac blossoms, no leaves and no stems
- 2 1/2 cups boiling water
- 1/4 cup lemon juice
- 4 cups sugar
- 1 box sure-gel or 6 tablespoons powder pectin
How To Make lilac jelly

Step 1Put blossoms in a large jar and pour boiling water over them.

Step 2Let steep for 8 hours or overnight.

Step 3Strain and squeeze flowers dry. You should have 2 1/4 cups of infusion. Add more water, if needed.

Step 4Place infusion, lemon juice, and pectin in large heavy pot.

Step 5Bring to a rolling boil.

Step 6Add sugar, stirring.

Step 7Return to boil. Boil for 1 minute, stirring constantly.

Step 8Remove from heat. Skim off foam, if needed. Note: adding 1 teapoon butter before sugar cuts down foaming

Step 9Ladel in hot jars, leaving 1/4 inch head space.

Step 10Wipe rim, screw on lids.

Step 11Put in water bath (warm to hot water) - be sure that water is 1 inch over jars.

Step 12Process for 10 minutes.

Step 13Remove and cool.
