2 lbwashed, cut or whole, figs

·juice of 1 lemon

·rind of 1 lemon
How to Make Fig Preserves
- combine ingredients & let mixture boil as hard as it will.
- After preserves begin to thicken, test by placing a small amount in the freezer. If syrup jells quickly, preserves are done.
- Put preserves in hot sterilized jars & seal. Will make about 3 pints.
