I've been making this jam for years. It's easy to make and delicious too.

This three-ingredient jam is the perfect way to use fresh strawberries. It's made in an old-fashioned way without pectin which allows the flavor of the strawberries to shine. Once canned, enjoy fresh strawberry jam well beyond the strawberry season. Spread on buttered toast, a hot biscuit, or make a tasty PB&J sandwich.

- 4 pounds fresh strawberries
- 5 cups granulated sugar
- 2 tablespoons lemon juice concentrate (or fresh)

The recipe makes 3 1/2 pints (7 half pints). You'll need a bigger pot than expected because the mixture expands before it cooks down. We sterilized the jars in the dishwasher and boiled the lids before adding the jam.

Step 1Clean and wash the strawberries. Cut the strawberries in half.

Step 2Smash the berries or run them through a food processor leaving chunks to suit your taste. You need 6 cups of mashed berries.

Step 3In a large pot, combine the strawberries and sugar over medium-high heat.

Step 4Once the mixture comes to a boil, set a timer for 20 minutes. Cook at a rolling boil for 20 minutes; stir occasionally.

Step 5In the last 5 minutes of cooking time, add the lemon juice.

Step 6Pour jam into sterilized canning jars leaving 1/4-inch head space.

Step 7Wipe the rims with a cloth dampened with vinegar. Add the cap and ring to the jar.

Step 8Process in a boiling hot water bath for at least 10 minutes.

Step 9Remove the jars from the water. Allow them to set up for 24 hours.
