Bacon Tomato Jam

Ingredients

·1 lb. thick sliced bacon, diced

·2 lbs. tomateos, seeded and diced

·1 medium white onion, diced

·1/2 cup sugar

·1/2 cup packed dark brown sugar

·3 tbsp. cider vinegar

·2 tbsp. minced garlic
-
·1/4 tsp. red pepper flakes
-
·2 tbsp. chopped fresh parsley

·salt and black pepper to taste
How to Make Bacon Tomato Jam
- Cook bacon in large pan til crisp. transfer bacon to paper towel lined plate; discard drippings.
- Add tomatoes, onion, granulated sugar, brown sugar, vinegar, garlic, and pepper flakes to pan along with bacon. Bring mixture to a boil, stirring often. Simmer mixture, stirring occasionally til thick and jam like consistency, 1 1/4 to 1 1/2 hours. Stir in parsley and season with salt and black pepper
