Ingredients
- - 1 lb. thick sliced bacon, diced
- - 2 lbs. tomateos, seeded and diced
- - 1 medium white onion, diced
- - 1/2 cup sugar
- - 1/2 cup packed dark brown sugar
- - 3 tbsp. cider vinegar
- - 2 tbsp. minced garlic
- - 1/4 tsp. red pepper flakes
- - 2 tbsp. chopped fresh parsley
- - salt and black pepper to taste
How To Make bacon tomato jam

Step 1Cook bacon in large pan til crisp. transfer bacon to paper towel lined plate; discard drippings.

Step 2Add tomatoes, onion, granulated sugar, brown sugar, vinegar, garlic, and pepper flakes to pan along with bacon. Bring mixture to a boil, stirring often. Simmer mixture, stirring occasionally til thick and jam like consistency, 1 1/4 to 1 1/2 hours. Stir in parsley and season with salt and black pepper
