I got this recipe from a co-worker. She said this is her Dad's favorite thing in the world. I made if for a Christmas eve treat. My husband really liked it. It did have all of his favorites....Bacon, Onions, Tabasco and Coffee. We ate with crackers and sliced bread

Ingredients
- 1 pound smoked bacon
- 4 cloves garlic
- 1 medium onion sliced
- 3 tablespoons brown sugar
- - tabasco sauce to taste
- 1 cup coffee
- 1/4 cup apple cider vinegar
- 1/4 cup maple syrup
- - black pepper to taste
- - water
How To Make bacon jam

Step 1In a non stick pan, fry bacon in batches until browned and beginning to crisp. Use scissors to cut in 1 inch pieces.

Step 2Fry onion and garlic in bacon fat on medium heat until translucent.

Step 3Transfer the bacon, onion and garlic into a heavy based cast iron pot and add the rest of the ingredients except for the water. Simmer for 2 hours adding 1/4 cup water every 25-30 minutes and stir.

Step 4Cool for about 15 minutes and then place in food processor. Pulse for 2 - 3 seconds so that you leave texture to the jam or you could keep processing and make it a smoother and more past like.
