bacon jam
I came across this recipe online. I made it as written but there was something, in my opinion, was missing. So, I tweaked it in a few places and it was much better. I first tried this on crackers and it was good. But, when I mixed it with ground beef it was amazing!

Ingredients
- 1 pound bacon, thick cut, coursely chopped
- 1 small onion, coursely chopped
- 5 cloves garlic, chopped
- 1/2 cup brown sugar, packed
- 1/2 cup coffee, brewed
- 1/4 cup maple syrup
- 1 tablespoon apple cider vinegar
- 1 tablespoon mustard, grainy
- 1/2 teaspoon chili powder
- 1/4 teaspoon cayenne pepper
How To Make bacon jam

Step 1Fry the bacon in a heavy bottomed skillet (with a lid) until almost crispy. Transfer cooked bacon to a bowl and set aside.

Step 2Drain all but 2 tablespoons of the bacon fat. Add onion and garlic and sauté for about 5 minutes, until onion has a soft texture..

Step 3Return the bacon to the pan and add all other ingredients.

Step 4Bring contents of skillet to a boil and then lower heat to medium low. Cook for 30 minutes and check consistency. The consistency should be that of jam.
