How to Make Apple or Pear Butter
- In a heavy pan, mix the fruit, cinnamon stick, brown sugar, lemon zest and cloves Add enough apple juice just to cover and bring it to a simmer. Cook, uncovered, til fruit is soft, 15 to 30 minutes. Strain off any excess juices and remove the cinnamon stick.
- Mash by hand for a chunky butter or in a food processor for a smooth butter.
