With Thanksgiving approaching I wanted to share a recipe for gravy that we have used for many years. It was published in a Boulder, CO newspaper. We always double the recipe.

Ingredients

  • 1/4 cup roasted garlic
  • 1 tablespoon diced carrot
  • 1/4 tablespoon honey
  • 2 ounces all purpose flour
  • 1 tablespoon diced yellow onions
  • 1 tablespoon diced celery
  • 1/2 cup unsalted butter
  • 1 quart chicken stock
  • - salt and pepper to taste

  • Step 1
    IN A SAUCEPAN USE 4 TABLESPOONS BUTTER AND SWEAT ONION, CARROT, AND CELERY UNTIL TRANSLUCENT
  • Step 2
    ADD GARLIC AND HONEY, REMAINING BUTTER AND FLOUR
  • Step 3
    COOK UNTIL THE FLOUR IS GOLDEN BROWN
  • Step 4
    ADD STOCK AND BRING TO A BOIL
  • Step 5
    TURN HEAT TO SIMMER FOR 1 HOUR, WHISKING EVERY 15 MINUTES
  • Step 6
    IF CONSISTENCY GETS TOO THICK, ADD WARM WATER OR STOCK TO KEEP DESIRED CONSISTENCY
  • Step 7
    USE HAND MIXER AND PULSE GRAVY WHILE SIMMERING TO BLEND VEGETABLES WELL
  • Step 8
    ADD SALT AND PEPPER TO TASTE AND SERVE
