Stove Top


  • 1 c
    onions chopped
  • 1/4 c
    celery chopped
  • 1 Tbsp
    garlic chopped
  • 1 c
    dry red wine
  • 1 c
    beef or chicken stock
  • 3 c
    crushed tomatoes in puree
  • 1 Tbsp
    fresh basil chopped (or 1 tsp dried)
  • ·
    salt and pepper

How to Make Quick Tomato Sauce


  1. Sauté onions, celery and garlic in oil, medium heat til soft
  2. Add red wine, cook til reduced to about 1/4 cup
  3. Add stock, tomatoes, bring to boil, reduce heat and add basil, salt and pepper to taste
  4. May add meatballs at this point and simmer for 30 minutes. Remove meat balls,skim any fat and bring to a boil, reduce and simmer to thicken more if desired
