Not a lot of work for a really good sauce

Ingredients

  • 1 cup onions chopped
  • 1/4 cup celery chopped
  • 1 tablespoon garlic chopped
  • 1 cup dry red wine
  • 1 cup beef or chicken stock
  • 3 cups crushed tomatoes in puree
  • 1 tablespoon fresh basil chopped (or 1 tsp dried)
  • - salt and pepper

How To Make quick tomato sauce

  • Step 1
    Sauté onions, celery and garlic in oil, medium heat til soft
  • Step 2
    Add red wine, cook til reduced to about 1/4 cup
  • Step 3
    Add stock, tomatoes, bring to boil, reduce heat and add basil, salt and pepper to taste
  • Step 4
    May add meatballs at this point and simmer for 30 minutes. Remove meat balls,skim any fat and bring to a boil, reduce and simmer to thicken more if desired
