This is the recipe I have been making for a long time - don't remember exactly where I got it- I think it was my Aunt Martha.

Ingredients

  • 1 c
    fresh or canned mushrooms
  • 4 Tbsp
    butter or margarine
  • 3 Tbsp
    all purpose flour
  • 1 1/2 c
    milk or beef stock
  • 1/2 tsp
    salt
  • 1/8 tsp
    nutmeg
  • 1/8 tsp
    pepper
  • 2 large
    egg yolks, beaten
  • 2 tsp
    lemon juice

How to Make Homemade Mushroom Gravy

Step-by-Step

  1. Brown mushrooms in butter; add flour and blend. Add milk or stock, salt, pepper,and nutmeg; cook until thick. Stir slowly into the beaten egg yolks and add lemon juice; cook, stirring constantly until thick, about 2 minutes. Serve hot.

    You can use water, milk,stock, cream or sour cream for the liquid milk or beef stock or a combination of of these.
