This is very easy and very good. I found it on the net and it is a Chili Queen recipe. A tnt red chile sauce.

Add to Grocery List

1/4 c
bacon fat
1/4 c
1/2 tsp
black pepper
1 tsp
1 1/2 tsp
garlic powder with parsley (or plain)
2 tsp
ground cumin
1/2 tsp
dried oregano
2 Tbsp
chile powder - pure ground chile powder ( i use 3t california chile powder, 2t pasilla and 1t new mex, powders).
2 c
chicken broth (i use 1 14oz can plus 2 oz water)

How to Make Homemade Enchilada Sauce


  • 1Heat bacon fat til melted. Stir in flour and stir for about 2 minutes to combine.
  • 2Add all the dry ingredients and cook for 1 minute, stirring. Add chicken broth plus water, mixing til sauce thickens.
  • 3Turn heat to low and simmer for about 15 minutes. Add more water if needed, (sometimes I add milk if too thick).
