homemade enchilada sauce

This is very easy and very good. I found it on the net and it is a Chili Queen recipe. A tnt red chile sauce.

Ingredients

  • 1/4 cup bacon fat
  • 1/4 cup flour
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 1/2 teaspoons garlic powder with parsley (or plain)
  • 2 teaspoons ground cumin
  • 1/2 teaspoon dried oregano
  • 2 tablespoons chile powder - pure ground chile powder ( i use 3t california chile powder, 2t pasilla and 1t new mex, powders).
  • 2 cups chicken broth (i use 1 14oz can plus 2 oz water)

How To Make homemade enchilada sauce

  • Step 1
    Heat bacon fat til melted. Stir in flour and stir for about 2 minutes to combine.
  • Step 2
    Add all the dry ingredients and cook for 1 minute, stirring. Add chicken broth plus water, mixing til sauce thickens.
  • Step 3
    Turn heat to low and simmer for about 15 minutes. Add more water if needed, (sometimes I add milk if too thick).
