This is a very much used sauce in the trade.
Great for left over burgers, by crumbleing the burger in the sauce. And you could add any thing else to it for a left over meal.

  • 1/2 c
    chicken broth
  • 1/2 tsp
  • 1/6 tsp
    white peppers
  • 1/2 c
    light cream
  • 1 1/2 Tbsp
    minced onions
  • ·
    a pinch of nutmeg
  • 1
    egg yolks
  • ·
    to thicken roux equal parts of flour and margarine

How to Make Bechamel Sauce


  1. Simmer chicken stock, add cream, onions, & all except roux. Simmer 10 minutes. Add roux for thickness,rule of thum is when sauce just sticks to a spoon. It is ready.
