Recipe appeared in a watermelon article in last week's Reading Eagle, but no credits were given to the original cook. It looks like tomatoes and doesn't have a strong watermelon flavor, so your guests will be stumped when guessing what they are eating. They will just know it's good!

method Refrigerate/Freeze
yield Makes appx. 4 cups

Ingredients

  • 2 cups finely chopped watermelon
  • 1 cup crushed pineapple, well drained
  • 3/4 cup sweet onion, minced
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup orange juice
  • 1/4 teaspoon tabasco sauce

How To Make watermelon salsa

  • Step 1
In the order listed, stir all ingredients together in a bowl.
  • Step 2
Cover and refrigerate for at least 30 minutes before serving with tortilla chips. (can also be served over fish)
  • Step 3
Best made several hours in advance and refrigerated to allow flavors to meld.
  • Step 4
Note: Original recipe called for 1 cup of chopped onion, but I adjusted it to what I felt was the best taste.
