Recipe appeared in a watermelon article in last week's Reading Eagle, but no credits were given to the original cook. It looks like tomatoes and doesn't have a strong watermelon flavor, so your guests will be stumped when guessing what they are eating. They will just know it's good!

Ingredients

  • 2 c
    finely chopped watermelon
  • 1 c
    crushed pineapple, well drained
  • 3/4 c
    sweet onion, minced
  • 1/4 c
    fresh cilantro, chopped
  • 1/4 c
    orange juice
  • 1/4 tsp
    tabasco sauce

How to Make Watermelon Salsa

Step-by-Step

  1. In the order listed, stir all ingredients together in a bowl.
  2. Cover and refrigerate for at least 30 minutes before serving with tortilla chips. (can also be served over fish)
  3. Best made several hours in advance and refrigerated to allow flavors to meld.
  4. Note: Original recipe called for 1 cup of chopped onion, but I adjusted it to what I felt was the best taste.
