watermelon salsa
Recipe appeared in a watermelon article in last week's Reading Eagle, but no credits were given to the original cook. It looks like tomatoes and doesn't have a strong watermelon flavor, so your guests will be stumped when guessing what they are eating. They will just know it's good!

Ingredients
- 2 cups finely chopped watermelon
- 1 cup crushed pineapple, well drained
- 3/4 cup sweet onion, minced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup orange juice
- 1/4 teaspoon tabasco sauce
How To Make watermelon salsa

Step 1In the order listed, stir all ingredients together in a bowl.

Step 2Cover and refrigerate for at least 30 minutes before serving with tortilla chips. (can also be served over fish)

Step 3Best made several hours in advance and refrigerated to allow flavors to meld.

Step 4Note: Original recipe called for 1 cup of chopped onion, but I adjusted it to what I felt was the best taste.
