w d's rhubarb sauce

This recipe is from Will Dodge...He was telling me about his rhubarb sauce and I told him to send it to me. I have not made it yet, but should be good.

Ingredients

  • 2 pounds rhubarb (about 6 cups)
  • - 1 inch of water to pan
  • 1 cup sugar

How To Make w d's rhubarb sauce

  • Step 1
    Wash rhubarb and cut into 1 inch chunks. Place in sauce pan containing 1 inch of water. Cover tightly and simmer about 45 minutes.
  • Step 2
    Remove cover and cook until most of the water has evaporated. Add the sugar. (You may use a bit more if you like it sweet.) Will's Tip: If the sauce isn't thick enoigh to suit me I mix a fat teaspoon of corn starch with 1/4 cup or less of water and add at the time I add the sugar and stir like helly....
