STRAWBERRY SYRUP; CANNED from my heart and hands. Who doesn't Love Strawberries??? I just had to Enjoy the Fruits of the Season. This is My very own Personal recipe. Enjoy on pancakes, Waffles, ice cream, Cake or anything else your Heart Desires, as you know anything grandma cooks has gotta be Good

yield makes 6 pints or (8) -1/2 pint jelly jars = total time 2 hrs

Ingredients

  • 6 pints fresh from the farm strawberries or 1/2 a flat. (should make 6-7 cups juice.)
  • 3 cups sugar
  • 2 tablespoons pdr pectin
  • 2 tablespoons lemon juice
  • 1 tablespoon butter, cold
  • FOLLOW THE FOLLOWING STEPS; IN ORDER LISTED.

  • berries Washed and hulled.
    Step 1
    Wash and Sterilize Jars and lids in Pan of boiling water, Have ready. Measure out your 3 Cups sugar and set aside,
  • Step 2
    Wash and Hull strawberries Mash well to to a Fine pulp or Pulvinate with a blender.
  • I am using a FINE wire MESH Strainer.  . . ( works wonderful) 
keep stirring & straining that juice.  til you have about 6-7 cups.
    Step 3
    Strain Strawberries in a Fine mesh Strainer, or (you can use Cheese Cloth.) you should have No seeds and Only Juice in the pan. (be patient its worth the Effort)
  • Bring to a FULL ROLLING BOIL, that cannot be Stirred down.
    Step 4
    Pour Strawberry Juice in a big 6 Qt pan on high heat, Stir Constantly, Add your Pectin now, (2 TBS PDR PECTIN) Stir well Bring to a full roling Boil.
  • Step 5
    Add Sugar all at once. stir constantly, & bring to a Full rolling boil for 15 Minutes. Remove from Heat, add 1 TBS Butter, Stir well, Skin off any foam.
  • Fill your jars to 1/2
    Step 6
    Pour into sterilized jars, Seal at Once,
  • Place your HOT jars in Canner, Cover your Jars with Hot Water. 
Bring Water bath to Boiling for 15 Min. .
    Step 7
    Place Hot jars back into hot Water in Canner. Process in Water bath for 15 min @ full boil. . . . . Enjoy your Syrup.
