strawberry sauce

I first started making this in high school as part of a cake competition. I got rave reviews on it, saying that it tasted like a liquid strawberry fruit roll up. Long story short, this recipe stayed with me while the rest of the cake didn't.

makes about 1 1/2 cups
Ingredients
- 1 pint strawberries, fresh
- 1 cup sugar
- 1 tablespoon lemon juice, fresh (about 1/2 a lemon)
How To Make strawberry sauce

Step 1Slice the strawberries thinly (after removing the tops).

Step 2Add to a saucepan with the sugar and the lemon. Cook over medium heat until the strawberries are almost dissolved and the sauce is slightly thickened.

Step 3Drain through a mesh sieve into a blow, pressing the strawberries through (it will leave most of the seeds behind the first time).

Step 4Repeat step 3 one more time. Can be store in an air tight container in the fridge for up to a week. (you can freeze it in little portions using an ice cube tray and then moving to a plastic bag).
