Ingredients

  • 6 ounces onions, fine dice
  • 1 ounce whole butter or bacon fat
  • 3 - apples (tart) or peaches, peeled
  • 3 - apricots
  • 4 ounces granulated sugar
  • - hot paprika, to taste
  • - salt and white pepper, to taste

How To Make savory fruit compote

  • Step 1
    In a large skillet or Dutch oven, sweat the onions in the butter or bacon fat without browning.
  • Step 2
    Slice the apples or peaches and apricots into thin, even pieces. Add the apples to the onions and saute for 1 to 2 minutes. Add the apricots.
  • Step 3
    Sprinkle the sugar over the fruits and cook, uncovered, over medium heat until tender. Season with paprika, salt and white pepper. Serve warm.
