  • 6 oz
    onions, fine dice
  • 1 oz
    whole butter or bacon fat
  • 3
    apples (tart) or peaches, peeled
  • 3
  • 4 oz
    granulated sugar
  • ·
    hot paprika, to taste
  • ·
    salt and white pepper, to taste

How to Make Savory Fruit Compote


  1. In a large skillet or Dutch oven, sweat the onions in the butter or bacon fat without browning.
  2. Slice the apples or peaches and apricots into thin, even pieces. Add the apples to the onions and saute for 1 to 2 minutes. Add the apricots.
  3. Sprinkle the sugar over the fruits and cook, uncovered, over medium heat until tender. Season with paprika, salt and white pepper. Serve warm.
