How to Make Savory Fruit Compote
- In a large skillet or Dutch oven, sweat the onions in the butter or bacon fat without browning.
- Slice the apples or peaches and apricots into thin, even pieces. Add the apples to the onions and saute for 1 to 2 minutes. Add the apricots.
- Sprinkle the sugar over the fruits and cook, uncovered, over medium heat until tender. Season with paprika, salt and white pepper. Serve warm.
