Ingredients
- IN A SAUCEPAN COMBINE, AND STIR IN:
- 1/2 cup sugar
- 1 tablespoon corn starch
- 1 cup water
- COOK OVER A LOW FLAME, STIRRING CONSTANTLY, UNTIL THICK. REMOVE FROM THE FIRE AND STIR IN:
- 3 tablespoons soft butter
- 1/2 teaspoon grated lime rind
- 1 1/2 tablespoons lime juice
- 1/8 teaspoon salt
- CHILL WELL. JUST BEFORE SERVING BEAT SAUCE WITH A WIRE WHISK.

Step 1Use a pretty clear parfait glass to serve this in, or a small dessert bowl with a pretty shape. It's light and so elegant, for that extra special ending to a dinner party.
