The cookbook "This is the Way We Cook!" included this sauce recipe and it was served over the coconut pudding. It is a special ending for a great meal!

Ingredients

  • IN A SAUCEPAN COMBINE, AND STIR IN:
  • 1/2 cup sugar
  • 1 tablespoon corn starch
  • 1 cup water
  • COOK OVER A LOW FLAME, STIRRING CONSTANTLY, UNTIL THICK. REMOVE FROM THE FIRE AND STIR IN:
  • 3 tablespoons soft butter
  • 1/2 teaspoon grated lime rind
  • 1 1/2 tablespoons lime juice
  • 1/8 teaspoon salt
  • CHILL WELL. JUST BEFORE SERVING BEAT SAUCE WITH A WIRE WHISK.

How To Make lime sauce (to serve with pudin di coco)

  • Step 1
    Use a pretty clear parfait glass to serve this in, or a small dessert bowl with a pretty shape. It's light and so elegant, for that extra special ending to a dinner party.
