homemade orange curd, my way****

I have recipes using lemon curd, but am not a great fan, so I made this orange curd with my kitchen aid juicer attachment, and YUM!!!!

Ingredients

  • 1 1/2 medium navel oranges
  • 1 teaspoon orange extract
  • 1 1/2 cups sugar
  • 1 stick unsalted butter (do not substitute)
  • 6 egg yolks, beaten
  • 1/8 teaspoon kosher salt

How To Make homemade orange curd, my way****

  • Step 1
    Zest oranges, cut them in half, and juice them with the juicer attachment of the kitchen aid mixer (gets the most juice possible from it). Combine jest and juice (about 1/2 cup, but got lots more, so multiply remaining as needed, or save juice to make orange bread or muffins or whatever else you like) in medium saucepan. Add remaining and heat over med heat, stirring constantly. After about 30 min the mixture should start to boil gently. Continue boiling 3-4 min, stirring constantly. Remove from heat and cool to room temperature before using. Store in airtight container in fridge. I have also frozen it, just make sure to put date on the top!
