Gingerbread Pancakes w/Orange Sauce

I know the photo should have a dollop of butter or whipped cream in the center with an orange twist...but to bad. Ya get what ya get today! lol They are very yummy and that's all you need to know! :o)

This recipe was created today because we wanted molasses cookies, but didn't have enough of the right But we didn't need as much stuff for pancakes, so I looked at many recipes for molasses/gingerbread pancakes and none seemed quite right...So yeah...created one.
THEN upon looking in my frig, realized I had orange sauce leftover from cupcakes I made the other day, and when I made those, everyone talked about how good it would be on french toast...well, here we have gingerbread pancakes, just how amazing would it be on these?!?!
AND I was daughter agreed and so did the daycare kids...everyone had seconds...YUM

I put this sauce into squeeze bottles and it stores nicely in the frig...take out and pop in microwave to warm it up and YUM

How to Make Gingerbread Pancakes w/Orange Sauce


  1. Pancakes: Sift together flour, sugar, powder, soda, salt, ginger, cinnamon and nutmeg. Set aside
    Whisk together egg, vanilla, molasses, milk and zest if desired...mixing well.
    Whisk dry ingredients into the wet mixture until combined.
    Heat sprayed skillet over medium heat, ladle desired pancake size amount, I did a little less than 1/4 cup, onto hot skillet, when bubbly and dry at edges flip over and continue to cook a minute or two until done. Turn onto plate, spread with butter if desired and drizzle with orange sauce or maple syrup.
  2. Orange Sauce: In a small saucepan over medium heat, melt butter. While butter melts, in a medium bowl whisk eggs until lighter in color, then add sugar, water, orange juice and zest, whisking together until well combined. Stir into melted butter in saucepan and cook over meduim heat stirring constantly until starts to boil, then cook another 30 seconds. Remove from heat, cool slightly and serve with pancakes. Or allow to cool, stirring occasionally, put in squeeze bottles and store in refrigerator for future use. This makes about 3c of sauce...I halved it one time too and it turned out fine.
  3. Other Uses For Sauce: cupcake filling, cake topping, french toast topping, belgin waffle topping, muffin filling and the list goes on...this sauce would even be good to dip chicken or turkey in...
    oh great...just had the idea to add cranberries to this...yummy with turkey! lol
    Mixing this sauce with some maple syrup would be amazingly good too! :)
