gingerberry relish
I am allergic to oranges and always looking for cranberry recipes that don't use orange. Cranberries are such a wonderful winter fruit. Here they are combines with pineapple and ginger. Need I say more?

Ingredients
- 1 can (8 1/4 ounce) crushed pineapple in syrup not juice pack
- 2/3 cup sugar
- 1/2 cup water
- 3/4 teaspoon ground ginger
- 1 package (12 ounces) cranberries
How To Make gingerberry relish

Step 1In a medium saucepan combine undrained pineapple, sugar, water, and ginger. Cook, stirring constantly until sugar is dissolved. Add cranberries .

Step 2Bring mixture to a boil. Continue stirring frequently. Reduce heat and simmer until cranberries pop (4-5 more minutes). Cool. Transfer to an airtight container and keep refrigerated until used. Will keep up to 3 days.
