game plan apple-glazed meatballs

My daughter is again having a super bowl party at her house and I wanted to bring something different other than my dip and chicken wings, lol. So Iv'e been experimenting and so far have come up with these meatballs that are very tasty, and also very handy to eat. I don't have a pic yet, but am working on it.

Ingredients For game plan apple-glazed meatballs

  • 1 lg
    egg
  • 1/4 c
    milk, i used 1%
  • 12 slice
    day old whole wheat bread, torn into pieces
  • 1 lb
    lean ground beef or ground turkey
  • 1/4 tsp
    each, salt and pepper
  • 1 Tbsp
    minced garlic
  • 1 Tbsp
    vegetable oil
  • 1 c
    apple juice
  • 1/4 c
    low-sodium soy sauce
  • 3 Tbsp
    packed, light brown sugar
  • 1-1/2 tsp
    cornstarch
  • 1 tsp
    ground ginger, or use more or less, whatever tastes good to you

    green onions, cleaned and chopped, white and green parts.

How To Make game plan apple-glazed meatballs

    In large bowl, whisk together egg and milk. Add torn bread and let sit for about 5-10 mins or until softened. Add beef, garlic, salt and pepper. Mix well.

    Shape mix into about 48 1" meatballs. Heat oil in lg skillet, over medium heat. Add a batch of meatballs, depending on how lg your skillet is. Cook, stirring occasionally for about 5-6 mins, or until browned. Transfer to covered dish and keep warm. Repeat w/ remaining meatballs.

    In medium sized bowl, combine apple juice, soy sauce, brown sugar, cornstarch and ginger. In same skillet used for meatballs, pour juice mix in and place over medium heat. Stir constantly until thickened and bubbly, add green onions and stir. return meatballs to skillet and gently stir to combine sauce and meatballs. Transfer to a lg serving bowl, add a toothpick, ( I use a team decorated bunch, ie: Patriots,) to each meatball. Stir any remaining sauce and pour over meatballs. serve!
