I have always loved Apple butter but we have a lot of Apricots and we found this recipe

Ingredients
- 3 1/4 cups water
- 2 1/3 cups dried apricots
- 1/2 cup sugar
- 2 tablespoons lemon juice
- 1 tablespoon apricot brandy (optional)
How To Make apricot butter

Step 1Put water, apricots,and sugar in a 2 quart pan over med-hi heat, bring to a boil

Step 2Reduce to low simmer uncovered 15 minutes stirring occasionally until apricots are tender and about 1 cup water is left.

Step 3remove from heat stir lemon juice and brandy

Step 4Process in food processor until smooth and thick Refrigerate 24 hours for flavor to develop. Use on toast, pancakes, or whatever you would like and enjoy.
