zucchini relish

I use up to 10 cups of ground zucchini and less pepper and onion depending on what's available. This is a sweet relish but you could easily add hot pepper seeds for heat.

Ingredients For zucchini relish

  • 8 c
    chopped zucchini
  • 2 Tbsp
  • 2 c
    cider vinegar
  • 3 c
  • 2 tsp
    mustard seed
  • 2 tsp
    celery seed
  • 2 c
    chopped onions
  • 2
    large bell peppers, chopped

How To Make zucchini relish

    Soak zucchini for 1 hour in the salt and water to cover.Then drain.

    In a large kettle mix vinegar,sugar, mustard seed and celery seed. Bring to a boil. Add zucchini,onions and peppers. Return to a boil.

    Pack in st 4 sterile pint jars or refrigerate.
