zucchini relish

I use up to 10 cups of ground zucchini and less pepper and onion depending on what's available. This is a sweet relish but you could easily add hot pepper seeds for heat.

Ingredients
- 8 cups chopped zucchini
- 2 tablespoons salt
- 2 cups cider vinegar
- 3 cups sugar
- 2 teaspoons mustard seed
- 2 teaspoons celery seed
- 2 cups chopped onions
- 2 - large bell peppers, chopped
How To Make zucchini relish

Step 1Soak zucchini for 1 hour in the salt and water to cover.Then drain.

Step 2In a large kettle mix vinegar,sugar, mustard seed and celery seed. Bring to a boil. Add zucchini,onions and peppers. Return to a boil.

Step 3Pack in st 4 sterile pint jars or refrigerate.
