I found this in a German organic food magazine. Haven't tried it yet but wanted to keep the recipe. Sounds interesting. Let me know how it turns out if you try!

Ingredients

  • 1
    lemon
  • 2 Tbsp
    smooth white almond butter
  • 1 tsp
    vegetable broth granules
  • 2 tsp
    dijon mustard
  • 1 tsp
    curcuma/tumeric
  • 1 tsp
    sweet paprika powder
  • 200 ml
    canola oil
  • ·
    salt, to taste
  • ·
    pepper, to taste

How to Make Vegan Mayo

Step-by-Step

  1. Juice lemon.
  2. In a tall mixing bowl / jar combine almond butter with 100ml lukewarm water, broth granules, dijon mustard, tumeric, paprika powder and lemon juice and blend with immersion mixer on high, slowly adding the oil, until a yellow cream is achieved.
  3. Season with salt and pepper to taste and use in place of regular mayo.
