I found this in a German organic food magazine. Haven't tried it yet but wanted to keep the recipe. Sounds interesting. Let me know how it turns out if you try!

Ingredients
- 1 - lemon
- 2 tablespoons smooth white almond butter
- 1 teaspoon vegetable broth granules
- 2 teaspoons dijon mustard
- 1 teaspoon curcuma/tumeric
- 1 teaspoon sweet paprika powder
- 200 milliliters canola oil
- - salt, to taste
- - pepper, to taste
How To Make vegan mayo

Step 1Juice lemon.

Step 2In a tall mixing bowl / jar combine almond butter with 100ml lukewarm water, broth granules, dijon mustard, tumeric, paprika powder and lemon juice and blend with immersion mixer on high, slowly adding the oil, until a yellow cream is achieved.

Step 3Season with salt and pepper to taste and use in place of regular mayo.
