Ingredients
- 48 button mushrooms (about 2 1/4 lbs.)
- 3 tablespoons tomato sauce
- 1 tablespoon tomato paste
- 3 tablespoons olive oil, extra-virgin
- 1 small shallot, sliced
- 4 cloves garlic, minced
- 4 cups prepared stuffing mix, day old
- 1/4 cup almonds, slivered, toasted
- 1/4 cup Parmesan cheese
- 3 tablespoons creme fraiche or sour cream
- 1 tablespoon parsley
- 1 teaspoon pepper
How To Make stuffing stuffed mushrooms

Step 1Preheat oven to 400 degrees F.

Step 2Remove stems from mushrooms; slice stems. Mix tomato sauce & paste; brush each mushroom with tomato mixture & place on a large parchment lined pan.

Step 3In a pot, heat 1 tbsp oil over low heat; add shallot & garlic. Cook, stirring, about 2 minutes. Stir in stems; cook 1 minute. Add leftover stuffing/dressing; heat. Remove from heat. Stir in almonds, 3 tbsp cheese, creme, parsley & pepper.

Step 4Mound stuffing/dressing in mushroom caps. Drizzle with remaining oil & remaining cheese. Bake 22 minutes or until golden.
