Ingredients

  • 48 button mushrooms (about 2 1/4 lbs.)
  • 3 tablespoons tomato sauce
  • 1 tablespoon tomato paste
  • 3 tablespoons olive oil, extra-virgin
  • 1 small shallot, sliced
  • 4 cloves garlic, minced
  • 4 cups prepared stuffing mix, day old
  • 1/4 cup almonds, slivered, toasted
  • 1/4 cup Parmesan cheese
  • 3 tablespoons creme fraiche or sour cream
  • 1 tablespoon parsley
  • 1 teaspoon pepper

How To Make stuffing stuffed mushrooms

  • Step 1
    Preheat oven to 400 degrees F.
  • Step 2
    Remove stems from mushrooms; slice stems. Mix tomato sauce & paste; brush each mushroom with tomato mixture & place on a large parchment lined pan.
  • Step 3
    In a pot, heat 1 tbsp oil over low heat; add shallot & garlic. Cook, stirring, about 2 minutes. Stir in stems; cook 1 minute. Add leftover stuffing/dressing; heat. Remove from heat. Stir in almonds, 3 tbsp cheese, creme, parsley & pepper.
  • Step 4
    Mound stuffing/dressing in mushroom caps. Drizzle with remaining oil & remaining cheese. Bake 22 minutes or until golden.
