My Mom's recipe. 12# turkey = 1/2 recipe if stuffing in turkey..
If not in turkey, add juice.

2 c
chopped celery (& leaves)
1 c
chopped onion
1 tsp
each: thyme, sage, salt
1/2 tsp
ground black pepper
1/4 c
6 c
bread cubes
1 Tbsp
poultry seasoning
1/2 c
chicken broth, wine or apple juice
1/2 c
(or more) chopped apples (i.e.granny smith)
1 lb
ground sausage


1Cook sausage, celery, onions & seasonings in butter 15 minutes.
2Add juice, broth or wine to bread cubes to moisten, then add cooked mixture, apples & poultry seasoning; stir thoroughly. Adjust with more juice or more bread if needed.
3Place stuffing in turkey before cooking...Bake in turkey. If not stuffing in turkey, put in casserole dish, and bake at 325 for approx. 30 minutes.
