strawberry vinaigrette dressing

I love this on Spring Mix. You can substitute and use other fruit jams. Also, I usually end up doubling the recipe. Even though it is a vinaigrette and you shouldn't have to use much on your salad, people tend to use more and get 2nd helpings =)

Ingredients
- 1/2 cup sugar
- 1/2 cup finely chopped onion
- 1/2 cup red wine vinegar
- 1 teaspoon salt
- 1/2 teaspoon dry mustard
- 1 cup canola oil
- 2 tablespoons strawberry jam
How To Make strawberry vinaigrette dressing

Step 1Combine sugar and onion. Mix well.

Step 2Add dry mustard and salt to sugar/onion mixture. Mix well and allow to sit for a few minutes to allow the onions time to break down.

Step 3Add red wine vinegar. Mix well.

Step 4Using a food processor (or blender) puree mixture for 1 minute.

Step 5Add strawberry jam. Puree for 2 minutes.

Step 6Keep pureeing while slowly pouring in canola oil until the dressing has emulsified (oil and vinegar no longer separate) This should take 2-3 minutes.

Step 7Keep in the refrigerator in an air tight container. Mix well before serving. Will keep for up to 7 days.
