spinach salad with warm "bacon" dressing

This is a vegetarian version of this salad. If you prefer, you can use bacon grease and crumbled bacon in place of the vegetable oil and "bacon" bits.

Ingredients

  • 4 ounces baby spinach leaves
  • 4 - mushrooms, sliced
  • - onion, thinly sliced
  • - tomato, thinly sliced
  • 2 - eggs, hard boiled and sliced
  • 1 tablespoon sunflower seeds, optional
  • WARM "BACON " DRESSING
  • 3 tablespoons vegetable oil
  • 2 teaspoons "bacon" bits (i use a vegetarian brand of artificial bacon bits)
  • 2 tablespoons red wine vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon dijon mustard
  • pinch each, salt and pepper

How To Make spinach salad with warm "bacon" dressing

  • Step 1
    Divide spinach, mushrooms, onion, tomatoes, and sunflower seeds between 2 plates. Top with sliced eggs
  • Step 2
    Place oil and "bacon" bits in a microwave safe measuring cup. Microwave 20 - 30 seconds, just until warm. Whisk in vinegar, sugar, dijon mustard. Season with salt and pepper.
  • Step 3
    Drizzle warm dressing over salads and serve immediately.
