spinach salad with warm "bacon" dressing
This is a vegetarian version of this salad. If you prefer, you can use bacon grease and crumbled bacon in place of the vegetable oil and "bacon" bits.

Ingredients
- 4 ounces baby spinach leaves
- 4 - mushrooms, sliced
- - onion, thinly sliced
- - tomato, thinly sliced
- 2 - eggs, hard boiled and sliced
- 1 tablespoon sunflower seeds, optional
- WARM "BACON " DRESSING
- 3 tablespoons vegetable oil
- 2 teaspoons "bacon" bits (i use a vegetarian brand of artificial bacon bits)
- 2 tablespoons red wine vinegar
- 1 tablespoon sugar
- 1/2 teaspoon dijon mustard
- pinch each, salt and pepper
How To Make spinach salad with warm "bacon" dressing

Step 1Divide spinach, mushrooms, onion, tomatoes, and sunflower seeds between 2 plates. Top with sliced eggs

Step 2Place oil and "bacon" bits in a microwave safe measuring cup. Microwave 20 - 30 seconds, just until warm. Whisk in vinegar, sugar, dijon mustard. Season with salt and pepper.

Step 3Drizzle warm dressing over salads and serve immediately.
