This is a vegetarian version of this salad. If you prefer, you can use bacon grease and crumbled bacon in place of the vegetable oil and "bacon" bits.

Ingredients

  • 4 oz
    baby spinach leaves
  • 4
    mushrooms, sliced
  • ·
    onion, thinly sliced
  • ·
    tomato, thinly sliced
  • 2
    eggs, hard boiled and sliced
  • 1 Tbsp
    sunflower seeds, optional
  • WARM "BACON " DRESSING

  • 3 Tbsp
    vegetable oil
  • 2 tsp
    "bacon" bits (i use a vegetarian brand of artificial bacon bits)
  • 2 Tbsp
    red wine vinegar
  • 1 Tbsp
    sugar
  • 1/2 tsp
    dijon mustard
  • pinch
    each, salt and pepper

How to Make Spinach Salad with Warm "Bacon" Dressing

Step-by-Step

  1. Divide spinach, mushrooms, onion, tomatoes, and sunflower seeds between 2 plates. Top with sliced eggs
  2. Place oil and "bacon" bits in a microwave safe measuring cup. Microwave 20 - 30 seconds, just until warm. Whisk in vinegar, sugar, dijon mustard. Season with salt and pepper.
  3. Drizzle warm dressing over salads and serve immediately.
