Spinach Salad with Warm "Bacon" Dressing

This is a vegetarian version of this salad. If you prefer, you can use bacon grease and crumbled bacon in place of the vegetable oil and "bacon" bits.
Ingredients

4 ozbaby spinach leaves

4mushrooms, sliced

·onion, thinly sliced

·tomato, thinly sliced
-
2eggs, hard boiled and sliced

1 Tbspsunflower seeds, optional
-
WARM "BACON " DRESSING
-
3 Tbspvegetable oil
-
2 tsp"bacon" bits (i use a vegetarian brand of artificial bacon bits)
-
2 Tbspred wine vinegar
-
1 Tbspsugar
-
1/2 tspdijon mustard
-
pincheach, salt and pepper
How to Make Spinach Salad with Warm "Bacon" Dressing
- Divide spinach, mushrooms, onion, tomatoes, and sunflower seeds between 2 plates. Top with sliced eggs
- Place oil and "bacon" bits in a microwave safe measuring cup. Microwave 20 - 30 seconds, just until warm. Whisk in vinegar, sugar, dijon mustard. Season with salt and pepper.
- Drizzle warm dressing over salads and serve immediately.
