This is a vegetarian version of this salad. If you prefer, you can use bacon grease and crumbled bacon in place of the vegetable oil and "bacon" bits.

Ingredients For spinach salad with warm "bacon" dressing

  • 4 oz
    baby spinach leaves
  • 4
    mushrooms, sliced
  • onion, thinly sliced
  • tomato, thinly sliced
  • 2
    eggs, hard boiled and sliced
  • 1 Tbsp
    sunflower seeds, optional
  • WARM "BACON " DRESSING
  • 3 Tbsp
    vegetable oil
  • 2 tsp
    "bacon" bits (i use a vegetarian brand of artificial bacon bits)
  • 2 Tbsp
    red wine vinegar
  • 1 Tbsp
    sugar
  • 1/2 tsp
    dijon mustard
  • pinch
    each, salt and pepper

How To Make spinach salad with warm "bacon" dressing

    Divide spinach, mushrooms, onion, tomatoes, and sunflower seeds between 2 plates. Top with sliced eggs
  • 2
    Place oil and "bacon" bits in a microwave safe measuring cup. Microwave 20 - 30 seconds, just until warm. Whisk in vinegar, sugar, dijon mustard. Season with salt and pepper.

    Drizzle warm dressing over salads and serve immediately.
