Ingredients

  • 8 ounces ground chorizo
  • 1 1/2 ounces shallots, minced
  • 1/4 ounce garlic paste
  • 4 ounces brown sugar
  • 3 ounces sherry vinager
  • 3 ounces vegetable oil

How To Make sherry-chorizo vinaigrette

  • Step 1
    Render chorizo in medium sauté pan, remove and save. Sweat shallots and garlic paste. Blend in and melt brown sugar. Add sherry vinegar and stir for 2 minutes. Remove from heat and whisk in vegetable oil. Pour into food processor and add cooked chorizo, pulse until chorizo is minced. Add Salt & pepper to taste. Serve warm.
