salad essentials: andy’s house dressing
I have been making this dressing for many years. Its roots came from a small restaurant in a small town in Massachusetts, over 25 years ago. I never got the original recipe, over my dead body, was the response I got; however, this is my version, based on taste. I have used it so much that it has earned the title “house dressing.” So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 1 cup olive oil, extra virgin variety
- 2 medium tomatoes, blanched, peeled, deseeded
- 1/4 cup tamari sauce, or liquid aminos
- 1/4 cup lemon juice, freshly squeezed
- 1/3 cup tahini, sesame variety
- 2 tablespoons sesame oil, toasted variety
- 2 cloves garlic, roughly chopped
- 1/2 tablespoon dry mustard powder
- 1/2 teaspoon salt, kosher variety, fine grind
- 1/2 tablespoon ancho chili powder
- 1 pinch cayenne pepper
- 1/2 cup water, filtered

Step 1PREP/PREPARE

Step 2What will you need? You will need a blender, or a food processor fitted with an S-blade, to make this dressing.

Step 3What is it? Well, it is a dressing; however, it can also be used as a dipping sauce for veggies, and breaded chicken tenders. Yummy.

Step 4How to store it? Store using a non-reactive jar (glass) in the fridge. It will last about 2 weeks.

Step 5Gather your ingredients (mise en place).

Step 6Blanch, peel and deseed the tomatoes.

Step 7Add all of the ingredients, except the olive oil, to a blender, or food processor fitted with an S blade.

Step 8Blend until completely smooth.

Step 9Turn the blender to low, and drip in the olive oil. The mixture will thicken as you slowly add the oil. Do not add it too fast.

Step 10PLATE/PRESENT

Step 11Serve over salad greens, or as a dipping sauce. Enjoy.
