Ingredients For jalapeno popper grilled cheese
- OPTION #1: (THIS WAY WAS TOO HOT FOR ME!)

4 mdjalapeno peppers
- OPTION #2: (I THINK THIS WAY WILL BE BETTER)

1 jarjalapeno peppers, sliced, mild or hot, drained, chopped
- THE REST....

4 Tbspcream cheese, room temperature
-
2 Tbspranch dressing
-
1 Tbspchives, dried
-
sun dried tomatoes, dry packed
-
3 slicepepper jack cheese or mexican blend shredded cheese
-
butter
-
4 slicebread of choice
How To Make jalapeno popper grilled cheese

1OPTION #1: (IF USING OPTION #2, SKIP TO STEP 3) First roast your jalapenos. You can do this on the barbeque or you can roast them on my stove element on medium low heat.

2Once the jalapenos are done roasting, place them in a Ziploc bag for a few minutes, then peel the skins off, cut them in 1/2 & remove the seeds & spines.

3OPTION #2: Drain juice out of jarred jalapenos. Chop finely.

4While the jalapenos are roasting (or option #1) combine the cream cheese, ranch dressing, chives & sun dried dry tomato in a bowl, mixing until smooth. For option #2, add chopped jalapenos to cream cheese mixture & blend well.

5On one slice of bread spread the cream cheese mixture & lay out your jalapenos, then top with plenty of cheese.

6Generously butter the outside of your sandwich & cook in a pan on medium heat until golden brown. Slice it in 1/2 & dig into this AMAZING grilled cheese sandwich!
