Oeey gooey, cheesy, creamy, spicy, crunchy goodness all in one amazing sandwich....mmmmmmmm!

Ingredients

  • OPTION #1: (THIS WAY WAS TOO HOT FOR ME!)
  • 4 medium jalapeno peppers
  • OPTION #2: (I THINK THIS WAY WILL BE BETTER)
  • 1 jar jalapeno peppers, sliced, mild or hot, drained, chopped
  • THE REST....
  • 4 tablespoons cream cheese, room temperature
  • 2 tablespoons ranch dressing
  • 1 tablespoon chives, dried
  • - sun dried tomatoes, dry packed
  • 3 slices pepper jack cheese or mexican blend shredded cheese
  • - butter
  • 4 slices bread of choice

How To Make jalapeno popper grilled cheese

  • Step 1
    OPTION #1: (IF USING OPTION #2, SKIP TO STEP 3) First roast your jalapenos. You can do this on the barbeque or you can roast them on my stove element on medium low heat.
  • Step 2
    Once the jalapenos are done roasting, place them in a Ziploc bag for a few minutes, then peel the skins off, cut them in 1/2 & remove the seeds & spines.
  • Step 3
    OPTION #2: Drain juice out of jarred jalapenos. Chop finely.
  • Step 4
    While the jalapenos are roasting (or option #1) combine the cream cheese, ranch dressing, chives & sun dried dry tomato in a bowl, mixing until smooth. For option #2, add chopped jalapenos to cream cheese mixture & blend well.
  • Step 5
    On one slice of bread spread the cream cheese mixture & lay out your jalapenos, then top with plenty of cheese.
  • Step 6
    Generously butter the outside of your sandwich & cook in a pan on medium heat until golden brown. Slice it in 1/2 & dig into this AMAZING grilled cheese sandwich!
