green tomato relish
This recipe is very old, over 40 years. I found this recipe in an old newspaper clipping in a book bought at a yard sale. I use it in deviled egg filling with horseradish also, macaroni, tuna, and potato salads, mix it with mustard to put on my corned beef. I hope you enjoy it as much as I have for the last 40 years.

Ingredients
- 6 cups hard green tomatoes - ground up
- 6 cups cabbage - ground up
- 3 large onions - ground up
- 3 large green peppers - ground up
- 2 bunches celery - ground up
How To Make green tomato relish

Step 1The spice mix will be added later after the brineing. SPICE MIX: 2.5 cups white vinegar 6 cups sugar 1/2 tsp cinnamon 1/2 tsp ground cloves 1/4 cup mustard seed

Step 2After grinding up vegs, combine in a bowl, and add 1/4 cup of salt to veg mix. Stir to combine, then let set 24 hours, covered. DRAIN AND RINSE WELL with cold water.

Step 3Now, in a large cooking pot, add washed veg mix, and add the spice mix. Mix well. Bring to a boil, then simmer for 1 hour, stir often so it won't burn, (I use a heat diffuser) KEEP SIMMERING EVEN WHEN LADLING INTO JARS. Boil lids, sterilize jars and seals, keep hot. Pour hot veg mix into hot jars, seal fast. let cool, and enjoy your relish.
