This was servered over fresh steamed veggies yesterday at my monthly diabetic class. It's so good. I cant wait to make it up for a big salad.

Ingredients
- 4 - med. ripe tomatoes
- 1 cup loosley packed sweet basil
- 1 tablespoon white wine vinegar
- 2 cloves garlic - smashed
- 2 teaspoons kosher salt
- 1 pinch red pepper flakes
- 1/2 cup evoo
- - black pepper
How To Make fresh tomato & basil dressing

Step 1Scoop the flesh and juices of the tomatoes out of the skins with a spoon into a bowl. discard skins. Whisk in the vinegar, garlic, salt, pepper, and red pepper flakes, breaking up the tomato as you do. Gradually whisk in the olive oil, starting with a few drops, then adding the rest in a steady stream to make a chunky, slightly thick dressing. Roughly chopped the basil and stir into the dressing. Set aside 15 mintues to let flavors come together. Remove garlic and serve over steamed mixed veggies.

Step 2Personally, I'd 'mince' the Garlic and leave it in.
