This was servered over fresh steamed veggies yesterday at my monthly diabetic class. It's so good. I cant wait to make it up for a big salad.

Ingredients For fresh tomato & basil dressing

4med. ripe tomatoes

1 cloosley packed sweet basil

1 Tbspwhite wine vinegar

2 clovegarlic - smashed

2 tspkosher salt

1 pinchred pepper flakes

1/2 cevoo

black pepper
How To Make fresh tomato & basil dressing

1Scoop the flesh and juices of the tomatoes out of the skins with a spoon into a bowl. discard skins. Whisk in the vinegar, garlic, salt, pepper, and red pepper flakes, breaking up the tomato as you do. Gradually whisk in the olive oil, starting with a few drops, then adding the rest in a steady stream to make a chunky, slightly thick dressing. Roughly chopped the basil and stir into the dressing. Set aside 15 mintues to let flavors come together. Remove garlic and serve over steamed mixed veggies.
