This was servered over fresh steamed veggies yesterday at my monthly diabetic class. It's so good. I cant wait to make it up for a big salad.

How to Make Fresh Tomato & Basil Dressing

  1. Scoop the flesh and juices of the tomatoes out of the skins with a spoon into a bowl. discard skins. Whisk in the vinegar, garlic, salt, pepper, and red pepper flakes, breaking up the tomato as you do. Gradually whisk in the olive oil, starting with a few drops, then adding the rest in a steady stream to make a chunky, slightly thick dressing. Roughly chopped the basil and stir into the dressing. Set aside 15 mintues to let flavors come together. Remove garlic and serve over steamed mixed veggies.
  2. Personally, I'd 'mince' the Garlic and leave it in.
