This was servered over fresh steamed veggies yesterday at my monthly diabetic class. It's so good. I cant wait to make it up for a big salad.

Ingredients

  • 4 - med. ripe tomatoes
  • 1 cup loosley packed sweet basil
  • 1 tablespoon white wine vinegar
  • 2 cloves garlic - smashed
  • 2 teaspoons kosher salt
  • 1 pinch red pepper flakes
  • 1/2 cup evoo
  • - black pepper

How To Make fresh tomato & basil dressing

  • Step 1
Scoop the flesh and juices of the tomatoes out of the skins with a spoon into a bowl. discard skins. Whisk in the vinegar, garlic, salt, pepper, and red pepper flakes, breaking up the tomato as you do. Gradually whisk in the olive oil, starting with a few drops, then adding the rest in a steady stream to make a chunky, slightly thick dressing. Roughly chopped the basil and stir into the dressing. Set aside 15 mintues to let flavors come together. Remove garlic and serve over steamed mixed veggies.
  • Step 2
Personally, I'd 'mince' the Garlic and leave it in.
