This dressing is wonderful served over a bed of lettuce with sliced tomatoes and avocados. I found it while watching Rick Bayless' One Plate at a Time.

Makes about 1 1/4 cups
Ingredients
- 3/4 cup vegetable oil, olive oil or a mixture of the two
- 1/4 cup rice vinegar
- 3 tablespoons mayonnaise
- 3 tablespoons grated mexican queso anejo, romano or parmesan
- 1 teaspoon salt (scant tsp)
How To Make creamy queso anejo dressing (aderezo cremoso con queso anejo)

Step 1Combine all ingredients in a blender jar and blend until smooth. Taste and season highly with additional salt, if necessary.

Step 2Pour into a jar with a secure lid and refrigerate until ready to use. Shake well immediately before use.
