This dressing is wonderful served over a bed of lettuce with sliced tomatoes and avocados. I found it while watching Rick Bayless' One Plate at a Time.

  • 3/4 c
    vegetable oil, olive oil or a mixture of the two
  • 1/4 c
    rice vinegar
  • 3 Tbsp
  • 3 Tbsp
    grated mexican queso anejo, romano or parmesan
  • 1 tsp
    salt (scant tsp)

How to Make Creamy Queso Anejo Dressing (Aderezo Cremoso con Queso Anejo)


  1. Combine all ingredients in a blender jar and blend until smooth. Taste and season highly with additional salt, if necessary.
  2. Pour into a jar with a secure lid and refrigerate until ready to use. Shake well immediately before use.
