Creamy Cucumber Dill Dressing

Cucumber and dill is always a pleasant combination. When I made this the first time I didn't know what to expect. It has a nice crisp taste and is good on fresh salads.

6 inch piece seedless cucumber, peeled
1 clove
garlic (use a small clove)
3/4 c
1 1/2 tsp
lemon juice
1 tsp
dry mustard
2 Tbsp
fresh dill, chopped or 1 tbsp dry
salt to taste

How to Make Creamy Cucumber Dill Dressing


  • 1Puree cucumber and garlic in food processor. Place puree in a fine mesh strainer, press down gently with a spoon and let drain. (Cucumbers are largely water, so if they are not well drained, the dressing will be too thin)
  • 2Place remaining ingredients in food processor and blend together
  • 3Add pureed cucumber and garlic. Mix together. If too thick, thin with a little water, a teaspoon at a time. Refrigerate for an hour (or longer) before serving.
