creamy cucumber dill dressing
Cucumber and dill is always a pleasant combination. When I made this the first time I didn't know what to expect. It has a nice crisp taste and is good on fresh salads.

yield
1 Cup
Ingredients
- 1 - 6 inch piece seedless cucumber, peeled
- 1 clove garlic (use a small clove)
- 3/4 cup mayonnaise
- 1 1/2 teaspoons lemon juice
- 1 teaspoon dry mustard
- 2 tablespoons fresh dill, chopped or 1 tbsp dry
- - salt to taste
How To Make creamy cucumber dill dressing
-
Step 1Puree cucumber and garlic in food processor. Place puree in a fine mesh strainer, press down gently with a spoon and let drain. (Cucumbers are largely water, so if they are not well drained, the dressing will be too thin)
-
Step 2Place remaining ingredients in food processor and blend together
-
Step 3Add pureed cucumber and garlic. Mix together. If too thick, thin with a little water, a teaspoon at a time. Refrigerate for an hour (or longer) before serving.
