Ingredients

  • 3/4 bottle zesty italian dressing
  • 1 package corn kernels, frozen
  • 1 medium zucchini, chopped
  • 1 large vidalia onion, chopped
  • 2 cups mexican blend shredded cheese with cream cheese
  • 1 cup sour cream, light
  • 6 - 8 slices bacon, cooked crisp & crumbled
  • 1 teaspoon cilantro, dried

How To Make creamy corn & zucchini

  • Step 1
    Heat dressing in skillet on medium high heat. Add vegetables; cook & stir 8 - 10 minutes or until crisp tender. Remove from heat.
  • Step 2
    Stir in cheese & sour cream; cook on medium heat 3 -5 minutes or until cheese is melted & mixture is heated though, stirring.
  • Step 3
    Top with bacon & cilantro.
