creamy caesar dressing
I searched this site for a dressing but could not find something that really stood out. So I found a recipe and tweeked it a bit. It's kind of thick but once you shake it with salad, it works out great. I served this with garlic bread instead of croutons.

Ingredients
- 1 clove elephant garlic
- 5 - anchovy filets, stuffed with capers
- 3/4 cup mayonnaise, light
- 3 tablespoons parmesan cheese (more if you like)
- 1 teaspoon worchestershire sauce
- 1 teaspoon dijon mustard
- 1/2 - lemon, juiced
- 3-4 tablespoons olive oil, light
- - salt and pepper to taste
How To Make creamy caesar dressing

Step 1In a mini processor, chop garlic and anchovies together. Add some of the oil in the anchovy container to the mixture. It'll look a bit pureed.

Step 2In a medium sized bowl, mix the anchovy mixture with the mayonnaise and all of the remaining ingredients.

Step 3Let sit in the refrigerator for an hour or so. The longer it sits, the stronger it gets.
