Creamy Caesar Dressing

I searched this site for a dressing but could not find something that really stood out. So I found a recipe and tweeked it a bit. It's kind of thick but once you shake it with salad, it works out great. I served this with garlic bread instead of croutons.

Ingredients

1 clove
elephant garlic
5
anchovy filets, stuffed with capers
3/4 c
mayonnaise, light
3 Tbsp
parmesan cheese (more if you like)
1 tsp
worchestershire sauce
1 tsp
dijon mustard
1/2
lemon, juiced
3-4 Tbsp
olive oil, light
salt and pepper to taste

How to Make Creamy Caesar Dressing

Step-by-Step

  • 1In a mini processor, chop garlic and anchovies together. Add some of the oil in the anchovy container to the mixture. It'll look a bit pureed.
  • 2In a medium sized bowl, mix the anchovy mixture with the mayonnaise and all of the remaining ingredients.
  • 3Let sit in the refrigerator for an hour or so. The longer it sits, the stronger it gets.
