cajun seasoning mix
I keep a hot and a "Not Too Hot" version of this on hand for use in...well...just about everything. I love hot and spicy food but NOT when flavor is sacrificed for heat. This recipe is adjustable for heat so flavor is never lost!! As always adjust to your taste.

Ingredients
- 5 tablespoons paprika
- 1 1/2-3 tablespoons salt, to taste
- 2 tablespoons each onion powder, garlic powder, dried oregano and dried basil
- 1 tablespoon dried thyme
- up to 1 tablespoon each black pepper and cayenne pepper*
How To Make cajun seasoning mix

Step 1Place all ingredients in an oversized air tight container. I use old clean jelly and pickle jars. Vigorously shake until well mixed. Use a tablespoon or two in recipes.

Step 2*I use about a teaspoon of both black and cayenne pepper in my "Not Too Hot" version.
