Blue Cheese Butter For Steaks

Susan Cutler

Have you ever had Blue Cheese Butter on your steaks? If not, you have missed out on something really good!

I like to freeze my recipe in plastic wrap in the shape of a tube and cut slices to put on each steak when I serve them.

I served my steaks this way on the 4th! How delicious!

6 oz
butter at room temperature (softened)
1/2 lb
bleu cheese of your choice, crumbled (try a fairly strong blue cheese, maybe a roquefort or stilton or if you want a milder blue cheese, try gorgonzola)
3/4 tsp
3/4 tsp
coarse black pepper

1In a bowl, cream the butter until smooth

Fold in the cheese, Worcestershire sauce and pepper (some chunks of the blue cheese should remain)
2Roll in plastic wrap or parchment paper and twist the ends to close
3If not using immediately, refrigerate (3 days maximum) or freeze (2 months, maximum)

If frozen, thaw and cut into 1 1/2 ounce pieces and place on top of hot steaks
