blackberry vinaigrette

May sound like an odd combination, but we love it!

Ingredients

  • 1 cup blackberries, fresh or frozen
  • 2 teaspoons minced shallots
  • 1/4 teaspoon minced garlic
  • 1 tablespoon honey
  • 1/2 teaspoon dijon mustard
  • 4 tablespoons balsamic vinegar
  • 1/2 cup olive oil

How To Make blackberry vinaigrette

  • Step 1
    Combine blackberries, shallots, garlic, honey, mustard and vinegar in a blender and process for 20 seconds.
  • Step 2
    Stop and scrape down sides before continuing.
  • Step 3
    Slowly drizzle oil into blender while running.
  • Step 4
    Strain dressing through fine mesh strainer.
  • Step 5
    Chill. Makes about 1 cup.
