beni hana ginger dressing (for salad or dipping)
I will not take credit for this recipe. I found it awhile back on the internet. I am not sure who to give credit to,....but given due credit,...this is a fabulous all purpose Asian Dressing. I just put it together this morning...and ...I will serve it over a bed of red leaf lettuce, slivered red onion, a pineapple ring, sliced hearts of palm, and chopped peanuts. I believe it would serve well as a dipping sauce too.

Ingredients
- 1/2 cup peanut oil
- 1/3 cup rice vinegar
- 1 teaspoon soy sauce
- 2 teaspoons lemon juice
- 2 tablespoons ketchup
- 1/8 large onion, chopped
- 1/2 stalk celery, minced
- 2-3" - section ginger root, finely grated
- 1 large clove garlic, crushed
- 2 teaspoons sugar
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons water
How To Make beni hana ginger dressing (for salad or dipping)

Step 1Place all ingredients in a blender or food processor and emulsify.

Step 2Keep covered in the refrigerator.
